2-Ingredient Pancakes Recipe (No Banana or Egg!)

With just two ingredients you can whip up a stack of soft, fluffy pancakes in under 10 minutes. No fancy ingredients, no long prep time. You just give the batter a quick stir, toss it in a hot pan, and breakfast is ready before you know it.

What’s in 2-ingredient pancakes?
You only need two ingredients to create the base of these pancakes!

- Self-rising Flour: Self-rising flour is available at most grocery stores. It includes flour, salt, and leaveners in the mix, so you can get a lot of lift from this one ingredient. If you’d like to make your own, King Arthur has a great recipe!
- Milk: This adds the fat that keeps these pancakes tender. For that reason, I recommend full-fat milk. However, you can make this recipe using any type of milk. Your pancakes will just be more or less tender.
Making fluffy homemade pancakes

Start by combining the milk and self-rising flour in a medium mixing bowl. You can add more or less milk to get the consistency you’d like — more milk = thinner pancakes, less = thicker pancakes!

Next, preheat a skillet or griddle to medium heat. Then, drop about 1/4 cup of batter per pancake. Allow the pancakes to cook for 2-3 minutes per side, or until each side is golden brown.

Serve these pancakes warm topped with fruit, maple syrup, a large banana, whipped cream, or just a little butter!
Variations
This recipe is a solid base to play with! Feel free to add flavor boosts and add-ins to customize breakfast. Here’s a few of our favorites!
- Chocolate Chips: Add milk, semi-sweet, dark, or white chocolate chips to the batter before cooking. Peanut butter chips are also great!
- Cinnamon Sugar: Add 1/2 tsp of cinnamon and 1 tbsp of sugar to the batter before cooking.
- Funfetti: Add sprinkles to the batter for a Funfetti option. My kids like these topped with whipped cream and more sprinkles!
- Vanilla Blueberry: Add 1 tsp vanilla extract and 1/2 cup blueberries to the batter before cooking.

No. Self-rising flour already has baking powder and a bit of salt mixed in, which helps the pancakes rise and get fluffy.
Usually this happens if your batter is too thin or if your self-rising flour is old and the baking powder has lost its oomph. Try using fresh flour and a slightly thicker batter for fluffier pancakes.
