  • Potatoes: I used a medley that included gold, red, and purple baby potatoes, but you could use any of those on their own. Yukon gold potatoes, fingerling potatoes, baby potatoesor red potatoes would be great!
  • Olive Oil: I love the healthy fats in olive oil, but you can use a variety of cooking oil. Vegetable oil will result in crispy potatoes. 
  • Montreal Steak Seasoning: This adds flavor to your potatoes in one super easy step. You can make your own using this recipe.

Start by washing, drying,  and then chopping your potatoes in half.

Then, place the potatoes in a large bowl. Drizzle the oil over them and sprinkle the seasoning. Then, toss the potatoes until they are all covered with oil and seasoning.

Spread the potatoes on a sheet pan lined with aluminum foil. Spread the potatoes out in a single layer. 
Bake the potatoes at 400° for 25-30 minutes with your baking rack in the center of the oven. The potatoes should be fork tender when they’re done.
