- Applesauce: I use unsweetened applesauce in this recipe, but you can use sweetened if you’d like a little added sugar. You won’t taste the applesauce in these muffins — it’s just there to add moisture and make the crumb tender. You can sub this with mashed banana, pumpkin, or greek yogurt.
- Sparkling Water: This helps give a fluffiness to the muffins. You can use any flavor or brand. but it does need carbonation!
Making easy muffins
Step 1 | Mix the Batter
In a large mixing bowl, mix the flour, applesauce, and sparkling water to make an extremely fluffy muffin batter. It’s going to look like this:

Step 2 | Fill the Tin
Prep a muffin tin with paper liners. Spoon the batter into the liners, filling them about 3/4 of the way. Feel free to use a mini muffin pan, but make sure that you use mini muffin tin liner so your mini muffins don’t stick!

Step 3 | Bake
Bake your muffins at 350° for 10-12 minutes. The tops should be golden brown and should spring back when you touch them.
Let your muffins cool on a cooling rack for 5-10 minutes.

Step 4 | Enjoy!
