3-Ingredient Quick and Easy Dinner Rolls (No Yeast!)
Dinner rolls have never been easier than this 3-ingredient, 15 minute recipe for quick dinner rolls. They’re tender, flavorful, and absolutely perfect!
Homemade bread can be intimidating, but not these easy rolls. You can make these in 15 minutes from start to baked and on the table. That’s not a typo. These rolls come out perfectly with no proofing, no rising, and very little effort. This is the perfect recipe for beginning bakers!
I come back to this recipe time and again because I’m bad at planning. I forget that dinner should involve more than just mains. These fluffy dinner rolls are an easy recipe I can toss together when I’ve forgotten to fill out the menu, and no one has to know. It’s a family favorite!
What’s in 3-ingredient dinner rolls?
You can make these rolls from three basic ingredients — you probably have them in your pantry right now!
- Self-rising flour: Self-rising flour is made from all purpose flour with baking powder and salt pre-mixed in, so that you can simply measure once and get both flour and leavening agent. If you want to make your own, King Arthur Baking has a great recipe.
- Mayonnaise: Mayo might seem weird, but it provides a tangy flavor and the perfect amount of moisture to create that airy texture! You can sub greek yogurt, sour cream , or even regular yogurt for the mayonnaise, if you prefer that.
- Milk: This rounds out the wet ingredients, adding fat and moisture. You can use any fat %, or any plant-based milk as a sub for this ingredient.
Making homemade dinner rolls
You can have fresh bread on the table in just a few simple steps:
Step 1 | Make Dough
In a large mixing bowl, combine all the ingredients. You can use a wooden spoon to stir them until you get a shaggy dough. At that point, I usually switch to using my hands to knead the dough. Sometimes, often in more humid weather, the dough ends up sticky. I just add a little more self-rising flour and knead it in until the dough cleans the sides of the bowl. You can also use a stand mixer to mix and knead your dough. Food processors work too!
Step 2 | Form Rolls
Next, pinch off a small amount of dough and roll it into a smooth ball. You can get 12 rolls out of this dough. Alternately, you can grease or line muffin cups, then press the dough into the prepared muffin tins.
If you choose to roll your dough, you’ll place the round balls onto a greased or lined baking sheet. If you want pull apart rolls, place them close together — almost touching. They’ll rise into each other as they bake.
Step 3 | Bake (and optional Brown)
Bake your rolls in a 375° preheated oven for 8-10 minutes, or until the tops are hard. These rolls don’t brown up a ton, but if you want a golden brown top on your roll, you can brush them with melted butter, then broil for 3-5 minutes. Be careful not to burn them!
Step 4 | Enjoy!
Let your rolls cool for a few minutes, and then serve them. They are delicious with butter, cream cheese, or jam!
Variations
This recipe provides a super simple base that you can jazz up with mix-ins and additions. Here are some of my favorites:
- Rosemary Rolls: Add 1 tbsp chopped fresh rosemary to the roll dough before forming it into rolls.
- Garlic Butter Rolls: Instead of brushing the tops with regular melted butter, add 1 tsp minced garlic to your melted butter, then brush the tops of the rolls.
- Poppy Seed Rolls: Brush our your baked rolls with melted butter, then sprinkle poppy seeds over the top.
- Cheesy Rolls: Add 1/2 cup of your favorite shredded cheese (cheddar is amazing!) to the roll dough before forming it into rolls.
