  • Enchilada Sauce: You can make this with either red or green enchilada sauce. For a more authentic Mexican rice (or classic arroz rojo), use red for that signature color and rich tomato-based flavor!
  • Chicken Broth: You can use chicken stock or chicken bouillon as well, or you can sub with  vegetable broth to keep things vegetarian!

If you’re using a rice cooker, place all ingredients in the rice cooker, give it a quick stir, put on the lid, and start it. 
For the Instant Pot, place all ingredients in, lock the lid, then press the “rice” button to cook.

When the rice cooker finishes, let the rice sit for 2 minutes, then fluff with a fork. For the Instant Pot, allow a natural release for 5 minutes, then do a quick release and fluff the rice with a fork.
