These banana muffins are the perfect make-ahead breakfast recipe. You can bake them and enjoy them on busy mornings for the rest of the week. They’re also a great choice for a quick snack.

I enjoy these cut down the center with a dollop of peanut butter or almond butter for the healthy fats. They travel well, which makes them perfect for placing in lunch boxes or for taking on the go when you’re late for that meeting. No need to skip breakfast with this basic recipe at your fingertips!

  • Bananas: You probably saw this one coming! You’ll need 4 large ripe bananas for this recipe. Overripe bananas are even better — they give you a stronger banana flavor!
  • Yellow Cake Mix: This is the secret to both making these easy, and making them foolproof. Your average box of cake mix has been engineered to come out in spite of what the general public can throw at it, so even if you’re a complete beginner, this recipe is something you can make!
  • Chocolate Chips: These add gorgeous little bursts of melted chocolate, which is always a plus, right? If the answer to that question is anything but yes, feel free to exchange the chocolate chips for other optional mix-ins, or just leave the mix-ins out altogether for 2-ingredient banana muffins!

Making Banana Chocolate Chip Muffins

Step 1 | Mash the Bananas

In a large mixing bowl, mash your bananas. You can use a food processor or hand mixer to mash your bananas, or you can use the old-fashioned method and smash them with a fork or potato masher.

Step 2 | Mix the Batter

Next, add the box of cake mix and the chocolate chips to the mashed banana. Use a wooden spoon or a mixer to stir the batter. It’s a thick batter, so you might need a little elbow grease!

Step 3 | Fill the Tin

This recipe makes 21 muffins, so you’ll need 21 muffin liners. Put them in your muffin pan, then fill the liners about 2/3 of the way full with the muffin batter. If you use a non-stick muffin pan, you can just skip the muffin liners. 

I like to sprinkle a few extra chocolate chips over the top just before I put them in to bake.

Bake your muffins at 350° for 10-12 minutes. The muffins are done when the tops are golden brown and a toothpick inserted into the center comes back clean. 

Let your muffins cool for a minute, then turn them out. They’re ready to form the base of easy breakfasts or a quick snack for the rest of the week!

  • Make these your own! Add any mix-in you’d like, including rolled oats, fresh fruit, vanilla extract, chopped nuts, or shredded coconut!
  • These make great mini muffins. Use a mini muffin tin and liners, and adjust the baking time to 8-10 minutes.

While this simple muffin recipe is fantastic with just the three ingredients listed, you may need to make adjustments. Here are a few substitution ideas: 

  • For the bananas: If you’re not a big fan of strong banana flavor, you can sub some or all of the bananas with 1 can pumpkin puree, 1 cup greek yogurt, or 1 cup club soda. For any of these subs, you do lose the natural sweetness of the bananas, but with a cake mix in the recipe, that might not be a major concern. In fact, subbing the pumpkin puree can turn this recipe into a super easy recipe for pumpkin muffins!
  • For the cake mix: I would not recommend subbing the cake mix with anything other than other cake mix. This recipe will work with gluten-free cake mix, keto cake mix, and just about any commercially available cake mix. You can mix things up by using a different flavor — butter pecan or chocolate cake mix come to mind!
  • For the chocolate chips: Mix-ins are easy to sub — just choose another one! White chocolate chips, peanut butter chips, chopped nuts or fruit, cinnamon chips, or shredded coconut are all options. You can also just leave out the mix-ins and enjoy a basic muffin!
