3-Ingredient Slow Cooker Hamburger Velveeta Queso Dip
An easy take on a game day favorite, this creamy, perfectly scoopable crockpot velveeta cheeseburger dip is a simple way to please the crowd!

This dip is a football season classic! Known as Velveeta hamburger dip, rotel dip, or in my family, crockpot queso, it’s an easy appetizer that’s a sure hit!
What’s in Velveeta cheese dip?

- Ground Beef: I used 80/20 hamburger meat. You can also sub this with ground turkey or ground chicken for a healthier take!
- Velveeta: You will need 1 block of cheese. I like Velveeta Queso Blanco for a white queso dip, but you can also use plain old regular Velveeta.
- Rotel:Rotel tomatoes give this dip a little kick! You will need one can of Rotel, and you can pick the heat level.

This cheesy dip makes a fantastic base for you to play around with. Here are a few ideas:
- Add mix-ins:Black beans, chopped green chilies, corn, and chopped jalapeno peppers add their own delicious flavors to the dip!
- Add spices: You can season yoru ground beef with taco seasoning (here’s a recipe for my favorite homemade taco seasonings), or use a little chili powder, garlic powder, and onion powder while browning!
- Garnish: Top with chopped cilantro, green onions, or a few chopped tomatoes!

Yes! You can make it up to 24 hours in advance. Store it covered in the refrigerator, then reheat on low in the crockpot, stirring often until smooth.

- 1 lbs ground beef
- 16 oz Velveeta queso blanco
- 10.5 oz can Rotel tomatoes
Instructions
- In a large skillet, brown and drain the ground beef.
- Chop the Velveeta into chunks. Add the Velveeta, browned ground beef, and Rotel tomatoes to the crockpot.
- Allow the ingredients to cook for 2-3 hours on high or 4-5 hours on low.
- Once the Velveeta has melted, stir the dip to combine. Serve warm.
