These fluffy protein pancakes use protein powder to get a sweet vanilla cupcake flavor. If you’re looking for a high-protein breakfast that doesn’t use powder, but still deliver a protein punch, these greek yogurt pancakes are a great option!

These fluffy pancakes are made with simple ingredients so you can enjoy a delicious breakfast without any guilt!

Pancake ingredients
  • Protein Powder: This is where your protein comes from. I use Gold Standard Whey Protein Powder in the Vanilla Ice Cream flavor, but you can use any vanilla-flavored protein powder you’d like!
  • Eggs: We use the whole egg in these pancakes, in part to get the structure and protein from the egg whites. The yolks are there to add enough fat that your pancakes don’t come out tough. 
  • Baking Powder: This gives the pancakes that fluffy texture. 
  • Milk: You can use any kind of milk here. In a pinch, you can sub this with water, but you won’t get as tender a pancake. 

Making 4-ingredient protein pancakes

Step 1 | Mix

In a large mixing bowl, mix your favorite protein powder, the eggs, baking powder, and milk of your choice. Whisk them together until you get a smooth pancake batter. 

Let the batter rest while you get ready to cook!

Step 2 | Cook

Heat up a griddle or skillet to medium heat. Melt some butter or coconut oil, or spray  cooking spray on the griddle. Drop 1/4 cup of pancake batter for each pancake. 

Let the pancakes cook until you see small bubbles on the top. Flip them and let them finish cooking until both sides are golden brown.
