Cake mix cookies are the perfect quick treat. The cake mix takes care of the flavor, and the texture of these little babies is right on every time. These strawberry ones are particularly delicious, combining strawberry flavor with a cakey cookie crumb.
These make a perfect dessert on their own, or you can make your own cookie sandwiches — just spread a little frosting or whipped cream in the middle!
What’s in strawberry cake cookies?
One of the best things about these cookies is that they’re made from simple ingredients you can get at your local grocery store!

- Strawberry Cake Mix: You can use any brand for this. Duncan Hines and Pillsbury cake mixes have a bit more cake mix (15.25 oz) than Betty Crocker(13.25 oz). The upshot of that is that you will get more pillowy cookies with a box of cake mix from Duncan Hines or Pillsbury, and flatter ones, like those in the pictures, from a Betty Crocker mix .
- Eggs: You need two large eggs for this recipe.
- Vegetable Oil: You can sub this with any oil you’d like, including melted butter. Each oil is going to affect the finished product in both taste and texture, so this can be a fun way to play around and customize your cookie!
Making 3-Ingredient Strawberry Cake Mix Cookies
Step 1 | Mix
In a large bowl, dump the cake mix, eggs, and oil. Use a hand mixer or wooden spoon to thoroughly mix the ingredients. This dough is very thin, and looks like this:

Step 2 | Drop or Roll
Next, line a cookie sheet with parchment paper or a silicone mat. You can either drop the cookie dough by rounded spoonfuls (or use a small cookie scoop) onto the lined baking sheet, or you can roll the cookies into roughly 1-inch cookie dough balls. The dough is very sticky and thin, so when I roll, I put a little powdered sugar on my hands to keep the sticking to a minimum.

Step 3 | Bake
Bake the cookies in the oven at 350° for 8-10 minutes. You do NOT want to overbake these. The secret to soft, delicious cookies is actually to underbake them slightly, so remove them when the tops have cracked, but the insides of the cracks don’t quite look cooked. That’s the sweet spot!
Step 4 | Enjoy!
Let your cookies cool on a cooling rack for 5 or so minutes, then enjoy! These lovely pink cookies are delicious on their own, sprinkled with powdered sugar, or with a scoop of vanilla ice cream!

Variations
