2-Ingredient Sweet Potato Dinner Rolls (No Yeast!)
These simple 2-ingredient sweet potato rolls are light, fluffy, and absolutely delicious. And the best part? You can make them in 20 minutes!
These are some of the easiest rolls I’ve ever made, but you’d never know it from the taste and texture. These delicious rolls are equally at home on your dinner table on the week nights, or for a fancy Thanksgiving dinner.
The sweet potato flavor makes these a great side dish for stew, soups, or roasted meat. It’s a family favorite, since I can make them so quick, and they go with so many things!
What’s in sweet potato dinner rolls?
These two simple ingredients make the lightest, fluffiest rolls!
- Canned Sweet Potatoes: Canned sweet potatoes make these rolls moist, with just the slightest sweetness — perfect for pairing with cinnamon butter!
- Self-Rising Flour: This is the secret to getting a fluffy dinner roll without yeast. Self-raising flour is made from all purpose flour with baking powder and salt pre-mixed in, so that you can simply measure once and get both flour and leavening agent. If you want to make your own, King Arthur Baking has a great recipe.
Making sweet potato dinner rolls
Step 1 | Drain and Mash Potatoes
Start by draining your sweet potatoes in a colander. Then, use a fork or a potato masher to mash them up. A 29 oz can of sweet potatoes makes the perfect amount for this recipe!
Step 2 | Make the Dough
Now, stir the mashed sweet potatoes and self rising flour in a mixing bowl or the bowl of a stand mixer. You should have a shaggy dough.
Turn the dough out onto a lightly floured surface and knead it several times until the dough becomes elastic and smooth. If you have sticky dough, you may need to add more flour to the dough.
Step 3 | Form the Rolls
Line a baking sheet with parchment paper or a silicone baking mat. Pinch of pieces of dough and roll them into balls to create your roll shape.
The rolls will rise slightly in the oven, so if you want pull-apart rolls, place the dough balls close together. You want them to nearly touch.
Step 4 | Bake
Bake your rolls at 400° for 10-12 minutes, or until the tops are golden brown.
Step 5 | Enjoy!
These rolls can be served right away! They’re best warm. I like to brush the tops with melted butter. Since these are sweeter rolls, I think they pair best with either regular butter, cream cheese, or cinnamon or honey butter. My husband loves these with everything bagel seasoning sprinkled on top. Go figure!
Variations
- Potato Rolls: You can replace the sweet potatoes with regular white potatoes to make regular old potato rolls!
- Pumpkin Rolls: Sub pumpkin puree for the sweet potatoes in a 1:1 ratio to make simple pumpkin rolls.
- Sweet Potato Flatbread: To turn this into a flatbread, use a rolling pin to roll the dough out into a rectangle. Bake the bread for 10-15 minutes at 400°.
- Sweet Potato Bread: Form your dough into a bread loaf, then place it on a baking pan and bake for 15-20 minutes at 400°.
