3-Ingredient Egg Bites

Ingredients

  • 8 eggs
  • 3/4 cup cottage cheese
  • 1/2 cup bacon bits

Instructions

  • Preheat oven to 350°.
  • In a blender or food processor, blend the eggs and cottage cheese until smooth. Add the bacon bits and pulse to mix them in.
  • Line a muffin pan with muffin cups, or use a silicone muffin pan. Pour the egg mixture into the cups, filling them about 2/3 full.
  • Bake egg bites at 350° for 20-25 minutes. Tops will be puffy and golden brown, and the eggs will be cooked through.
  • Allow egg bites to cool, then enjoy! These will keep in the fridge in an airtight container for up to one week.
