Ingredients
3-4
medium-sized
golden or russet potatoes
8
oz
mozzarella cheese, shredded
1/2
cup
cornstarch
vegetable oil for frying
Instructions
Peel and chop potatoes.
Place potatoes in pot of water and bring to boil. Boil until fork-tender.
Drain potatoes, then mash using potato masher or fork.
Add cheese and cornstarch to potatoes and mix well.
Place potatoes in a quart Ziploc bag. Flatter using rolling pin.
Place bag in freezer for 30 minutes.
Cut bag away from potatoes, then cut potatoes into sticks.
In a large heavy-bottomed pan, heat vegetable oil to 375°.
Drop potato sticks into oil and fry for 2-3 minutes, or until golden brown.
Remove from oil and allow to cool on paper towel-lined plate.
Serve warm with favorite dips!
