Ingredients

  • 12 oz frozen, fresh, or canned corn
  • 1/2 cup self-rising flour
  • 2 eggs
  • vegetable oil for frying

Instructions

  • Mash your corn in a blender or food processor.
  • In a large mixing bowl, combine flour, mashed corn, and eggs. Mix to create batter.
  • Heat oil to 375°.
  • Drop corn fritter batter into hot oil by the spoonful. Fry fritters for 2-3 minutes or until golden brown and crispy.
  • Remove fritters from oil and place them on a paper-towel lined plate.
  • Serve them warm with your favorite dipping sauce!
