frozen, fresh, or canned corn

self-rising flour

vegetable oil for frying
Instructions
Mash your corn in a blender or food processor.
In a large mixing bowl, combine flour, mashed corn, and eggs. Mix to create batter.
Heat oil to 375°.
Drop corn fritter batter into hot oil by the spoonful. Fry fritters for 2-3 minutes or until golden brown and crispy.
Remove fritters from oil and place them on a paper-towel lined plate.
Serve them warm with your favorite dipping sauce!
