5-Ingredient Chicken Enchilada Casserole

With melted cheese, tangy enchilada sauce, and hearty tortilla and chicken layers, this is as deliciously easy as weeknight dinner gets!

Ingredients

  • 14.5 oz can black beans
  • 12 oz can chicken
  • 2 cups shredded cheese, divided
  • 10 oz can red enchilada sauce, divided
  • 8-12 corn tortillas

Instructions

  • Preheat oven to 350°.
  • Drain and rinse black beans. Drain chicken.
  • In a large bowl, mix beans, chicken, 1 cup of cheese, and 1/4 cup enchilada sauce.
  • In a casserole dish or 9x13 pan, pour a small amount of remaining enchilada sauce. Spread it to cover the bottom of the pan.
  • Cover the bottom of the pan with corn tortillas.
  • Cover the tortillas evenly with the chicken and bean filling.
  • Cover the filling with another layer of tortillas. Pour the remaining enchilada sauce over the tortillas and top with the remaining cheese.
  • Bake at 350° for 20-25 minutes or until cheese is melted and bubbly. Remove from oven and serve warm.
