  • Overripe Bananas: The riper your bananas, the sweeter your banana bread will be. I like mine almost brown, but anything with brown spots will do!
  • Yellow Cake Mix: You can use any cake mix for this. Spice cake, white, vanilla, and butter pecan are all great too.

Start by mashing your bananas in a large bowl using a fork or potato masher. Then, add the cake mix to the mashed bananas and mix everything together. You can do this by hand, or with an electric mixer.

Once you’ve got a nice thick batter, you can line a 9×5 inch loaf pan with a sheet of parchment paper. Pour your batter into the bread pan and smooth it out with a spatula. 
Your bread will bake for about 45 minutes, or until it passes the toothpick test ( a toothpick inserted in the center comes out clean).

Remove your bread from the oven and let it cool. Once it’s fully cooled, cut it into slices and enjoy! I love mine with a little bit of peanut butter.
