The base of these egg bites is two simple ingredients; after that, you can get creative!

  • Eggs: This recipe uses large eggs. This recipe calls for whole eggs, but if you only want to use egg whites, check this one out
  • Cottage Cheese: Here for it’s cheesiness and for the high protein content! You can use a full-fat version, or any of the reduced fat varieties. You can also sub this for cream cheese.
  • Bacon Bits (or other mix-ins): You can use any mix-in you’d like! Feel free to experiment with veggies, meats, and cheeses.

Start by blending the cottage cheese and eggs in a blender or food processor. You want the egg mixture to be completely smooth! You can add the mix-ins here and pulse to mix them in.

Line standard muffin pan with muffin cups or use a silicone muffin pan. Fill the cups about 2/3 of the way full. Don’t overfill, since the egg muffins will puff as they bake.

Bake your egg bites at 350° for 20-25 minutes. The tops should be puffy and golden brown, and the little egg bites should be cooked through.

  • Veggies: Tomatoes, red bell pepper, fresh spinach, green onions, chopped zucchini, or mushrooms would all be delicious.
  • Cheese: Add gruyere on top for gruyere egg bites. Feta cheese, monterey jack cheese, or shredded cheese all add extra flavor.
  • Meats: Crumbled breakfast sausage, chopped turkey bacon, or any other breakfast meat make yummy egg cups!
