One of my favorite egg recipes, this breakfast egg skillet is simple but surprisingly delicious. I love that the easy method uses just one pan for a quick clean-up, while still allowing me to enjoy a mix of flavors first thing in the morning. It only takes me about 10 minutes to put this on the table, which is another win for someone who wants to eat well but doesn’t want to wake up early!

This recipe makes 1 serving, but you can easily double, triple, or quadruple it for a tasty meal for the whole family. Each individual ingredient is also easily subsituted, making this a great recipe for those with a special diet or health condition. Want to cut fat? Make this with egg whites. Less sodium? Leave out the bacon. You’ll still end up with a customized, delicious breakfast!

  • Frozen Hash Browns with Peppers and Onions: This is the secret ingredient to making these the best scrambled eggs. With its combination of filling potatoes and flavorful pre-chopped onions and bell peppers, these frozen hash browns are a kitchen shortcut that makes this recipe so darn easy!
  • Egg: What would an egg scramble be without an egg? I use a single large egg in this recipe, although if you want more, you can easily add 2 or even 3.
  • Turkey Bacon: Turkey bacon is lean and full of protein, making it a great choice for a healthy breakfast. 
  • Cheese: I used a pre-shredded cheddar/mozzarella blend for this recipe, but you can use any cheese you like, as long as it will melt. If you’re looking to lower fat in your diet, you can lose the cheese. 
  • Hot Sauce: A dash of your favorite hot sauce adds flavor and heat. I use Cholula hot sauce, but Tabasco, green chile, or any other will also work. This is also a fantastic way to change the flavor without a lot of work.

Making Cheesy Egg Scramble

Step 1 | Cook the Hash Browns

In a small nonstick skillet, prepare your hash browns according to the package. You may need a little butter, olive oil, or nonstick cooking spray to heat the hash browns over medium heat without sticking. These go in first because they take longer to heat than the other ingredients. You’re ready to start adding other ingredients when the hash browns are soft and heated through.

Step 2 | Add Eggs and Bacon

Turn the stove top to medium-low heat.Tear your bacon strips into small pieces and add them to the skillet. Then, crack the egg into the skillet and stir it around with a silicone spatula to scramble it with the rest of the ingredients. Keep moving everything around the hot pan until the egg is cooked through. 

Step 3 | Add the Cheese

Dump your cheese into the egg mixture, and stir it in until it melts. As soon as the cheese is melted, you’ll want to transfer this to a bowl or plate. Don’t leave it in the skillet or it will overcook and you will have tough eggs instead of the fluffy eggs we’re looking for.

Add a dash of hot sauce to your scramble. You can also add toppings, including black pepper, chopped green onions, chopped tomatoes, chopped fresh vegetables, or a dollop of sour cream!

Tips

  • For a lower-fat breakfast skillet, replace the egg with 1/2 cup egg whites. 
  • For creamy eggs, you can scramble them in a small bowl with a dash of heavy cream or whole milk before pouring them into the skillet. 

Variations

These fluffy scrambled eggs are a basic recipe that can form the foundation of a variety of quick breakfasts. Here’s a few options my family loves:

  • Sweet Potato Breakfast Scramble: Replace the hash browns with frozen sweet potato chunks and otherwise make the recipe as written!
  • Egg White and Spinach Breakfast Skillet: If you’re looking for a gourmet take, you can replace the egg with 1/2 cup egg whites, and add 1 cup chopped spinach to the recipe. For an even more elevated option, use goat cheese in place of cheddar or mozzarella!
  • Egg Scramble Breakfast Burritos: Just put your breakfast scramble in a warmed-up tortilla for a larger meal you can take on the go. This is my favorite way to eat egg scramble!

Instructions

  • Prepare hash browns according to instructions on package.
