What’s in 3-ingredient banana waffles?

- Pancake Mix: You can use any commercial just-add-water pancake mix, or make your own! I use Krusteaz Buttermilk pancake mix.
- Overripe Bananas: The riper your banana, the sweeter your waffle. Brown bananas are the best for this!
- Milk: You can use any milk, dairy or non-dairy. You can even sub this with water, although the waffles are a little less rich.
Making fluffy banana waffles

Tips for the Best Banana Waffles
- Use really ripe bananas. The browner, the better! Overripe bananas are sweeter, softer, and easier to mash into the batter.
- Don’t overmix. Stir just until everything comes together. A few lumps are fine! Overmixing can make your waffles tough instead of fluffy.
- Watch your batter. Different pancake mixes absorb liquid differently. You’re looking for a thick but pourable batter. Add a splash of milk if it’s too thick.
- Let them get golden. Resist the urge to open the waffle iron too early! Waiting until the steam slows down can help you get waffles that are crispy on the outside and fluffy inside.
- Keep them crispy. Place finished waffles on a wire rack instead of stacking them on a plate. This keeps the bottoms from getting soggy.
Banana Waffle Toppings and Variations
These waffles are delicious with just a little butter and maple syrup, but they’re also fun to dress up! Here are a few of our favorite ways to serve them:
- Peanut Butter Banana: Spread with peanut butter and top with fresh banana slices.
- Chocolate Chip: Sprinkle mini chocolate chips into the batter before cooking for an extra sweet treat.
- Strawberries and Cream: Add sliced strawberries and a dollop of whipped cream.
- Cinnamon Banana: Stir a little cinnamon into the batter for a warm, cozy flavor.
- Nutty Banana: Add chopped walnuts or pecans for a little crunch.
Storing and Reheating Banana Waffles
Refrigerator: Let leftover waffles cool completely, then store them in an airtight container in the fridge for up to 3–4 days.
Freezer: These waffles freeze beautifully! Place cooled waffles in a single layer on a baking sheet and freeze until solid. Transfer to a freezer bag and store for up to 2–3 months for best quality.
Reheating: Pop leftover waffles in the toaster or toaster oven to bring back those crispy edges. You can reheat them straight from frozen, too!

FAQs
Yes! Thaw them completely, drain off excess liquid, and mash before using.
Yes. Water or nondairy milk can work, although the texture and richness may change.
Too much moisture, undercooking, or stacking hot waffles can make them soft. Try cooking a little longer and cooling them on a wire rack.
It’s better to cook the waffles fresh and refrigerate or freeze the finished waffles. The batter can lose some of its lift as it sits.
Absolutely! Pancake mix is a convenient shortcut. A complete mix works particularly well for this three-ingredient version.
